Most non-alcoholic drinks have one-dimensional tastes, but bitters help balance them out. How do you make a mocktail using bitters that don’t include alcohol?

Zev Siegl, the co-founder of Starbucks, recently visited Bengaluru’s iconic Vidyarthi Bhavan to indulge in some local food. Siegl was in the city to attend an investors’ conference and stopped by at the restaurant to savor in some masala dosa and filter coffee. Siegl also left a note for the eatery, about his “good experience”.

“It was an honour to enjoy your famous food, coffee and warm welcome, I will take this wonderful experience with me back to Seattle,” read Siegl’s note, that Vidyarthi Bhavan shared on Instagram.

Siegl, who now works as a start-up consultant, was in Bengaluru to attend the Global Investors Meet 2022. He co-founded the international coffee chain in 1971 and served as Vice President and director until 1980, when he left the company.

The iconic restaurant said that they were “happy and proud” to have hosted Siegl.

This isn’t the first time that the iconic restaurant has hosted a special guest. Famous for its “masala dosae” (South Indian snack), the restaurant is a hotspot for political leaders, literary icons, students, and working professionals.

Recently, after Rishi Sunak took charge as the Prime Minister of the UK, the restaurant shared a picture of Sunak from his visit in 2019. According to the managing partner of the restaurant Arun Adiga, Sunak’s wife Akshata Murthy and her parents, Infosys co-founder Narayana Murthy and Sudha Murthy were regulars at the restaurant, the Indian Express reported.

Vidyarthi Bhavan, which was started in 1943-44 as a canteen for students, has become a beloved landmark in Bengaluru for local food.

Tannin

Tannins are the most important aspect of red wine. Wines with a high concentration of tannins tend to be harsh, and sometimes bitter and inky. Wines with lower levels of tannin are softer and smoother and may be easier to drink.

Body

This describes the wine’s apparent thickness and body. You can tell a wine has a lot of body because it leaves a thick film on the inside of the glass when you swirl it. A wine with a low body weight is nearly watery. A wine with a medium body is halfway between a light and a full one.

Making a pot of strong tea is the greatest approach to getting your taste buds to understand the four main categories of wine. Take it straight, with nothing else. This is how really astringent substances will taste (i.e., bitter). Put some lemon juice in it and give it a try. The presence of acidity has arrived. It should have an astringent flavour thanks to tannic acid. Add some sugar and mix it up now. This softens the overall flavour and texture.

The flavour is the fifth element to consider when describing wine. Flavour, in contrast to these four basic adjectives, is far more open-ended and subjective.

Flavours

Avoid jargon like “graphite” and “barnyard” and other tastes you’ve (hopefully) never experienced if you’re still unsure. Don’t go too creative; instead, focus on more universal tastes, such as fruity, earthy, spicy, smokey, or floral. Fruits including oranges, pears, apricot, black cherry, and peaches are also possible.

Wine Varieties

Red Wine

Because of the structural red tannins, red wines might be described as “firm,” “leathery,” or “bitter.” Red wine’s tannins are responsible for its varying degrees of smoothness, roughness, and chewiness. Tannin levels and overall “bolder” flavour increase with the wine’s darkness.

White Wine

The tannins in white wine aren’t the main attraction. White wines rely on acidity as their backbone instead of sugar. For this reason, certain vinos are described as “sharp” or “tart.” As an alternative, you may say that white wine is “flabby” or “flat” if it lacks sufficient acidity.

Rosé Wine

It’s no surprise that blush wine, also known as rosé, is a beautiful shade of pink. That’s because, unlike red wine, it only spends a brief amount of time in touch with the skins of the red grapes used to make it. Rosé lies in the low-astringency end of the colour wheel between red and white.

Dessert Wine

The term “dessert wine” refers to a kind of wine that is often served after a meal and is sweet in flavour. Since most of the wine’s sugars are used during fermentation, dessert wines sometimes have additional alcohol (often brandy) added to them to prevent them from completely disappearing.

Sparkling Wine

A substantial amount of carbonation, either as a byproduct of fermentation or by adding carbon dioxide after fermentation, defines a sparkling wine. Terms denoting sweetness or dryness will also appear on the labels of sparkling wines.

You can’t go wrong no matter what you decide. Each bottle will bring you closer to the ideal wine if you focus on the aspects of wine that you don’t like. The lack of fresh produce and fresh water in Rajasthan has influenced the cuisine there. Thanks to the wealthy’s hunting trips and the way of life of the local warriors, there is now a wide variety of novel foods and substances that can be stored for multiple days. Dried lentils, beans, milk, and buttermilk all have their culinary uses. Using oil and red chilies in cooking helps keep food fresh longer while also cutting down on water use. A signature dish from each of Rajasthan’s many distinct regions.

These meals are a must-eat before you leave Rajasthan:

Dal Baati Churma

This dish is often regarded as the state’s culinary icon. In Rajasthan’s arid regions, locals prepare a flatbread known as baati, which is hard and unleavened. Baati’s major appeal is that it can be stored for a long time without going bad and that it can be prepared with very little water. Dal is the standard accompaniment (lentil curry). Lentils make up the dal, while the churma is a blend of coarsely powdered wheat, jaggery, or sugar.

Laal Maans

The dish laal maans is the most well-known example of non-vegetarian cuisine in this mostly vegetarian state. The term laal maans comes from the dish’s distinctive crimson hue. The meat of a wild boar or a deer used to be the main ingredient in laal maans. Nowadays, it’s a hot mutton curry made with marinated mutton, garlic paste, sliced onions, and curds, cooked over a low flame. For meat lovers, this is a must-have.

Ker Sangri

Ker, a sort of wild berry that tastes both sour and spicy, is often combined with sangri, a type of long bean that grows in abundance in the desert regions of Jaisalmer and Barmer, to create one of the most well-known meals of Rajasthan. Due to its high protein content (53 percent), sangri is a staple food in times of drought. The peasants of Rajasthan, the story goes, discovered these two veggies long ago during a famine when all other greenery had withered away. As potable water was scarce, the locals carried these veggies home and prepared them in oil, seasoning them with various herbs and spices. In addition to their bajra rotis, they indulged in this delicious mixture. Nowadays, buttermilk or water is used in the cooking process.

Raab

This is a thick soup that is cooked and fermented from millet flour and buttermilk. A thick sauce is made by combining bajra flour with buttermilk in a traditional earthenware pot. The next step is to let it simmer on low heat for a long time, maybe overnight. As a result, it is often consumed in the form of soup. To create Makki ki raab, or corn raab, boiling maize kernels are added to the traditional recipe.

Ghevar

A traditional sweet dish from Jaipur, it consists of a disc of wheat that has been soaked in ghee, and milk, and topped with chopped almonds. In addition to its sugary flavour, this dish’s crunch comes from being formed in a mold. Ghevar may be made in a number of different ways, such as a plain ghevar, a mawa (condensed milk) ghevar, or a malai (milk) ghevar (cream).

Manipuri cuisine is a must-try because of its use of fresh and organic ingredients, fine herbs, spices, and very little oil to create meals that are wholesome, nutritious, and mouth-watering. Manipuri cuisine has abundant rice, a wide variety of veggies, and several fish dishes. If you prefer things on the spicier side, you’re going to love Manipuri cuisine since chillies are utilized liberally. Manipur also offers something sweet for those with a sweet tooth.

Alu Kangmet

For many in our nation, the potato is the go-to vegetable. It’s no secret that mashed potatoes in each state have their own unique twist. This also applies to Manipur. Alu kangment is the Manipuri term for mashed potatoes. The preparation is straightforward: the potato is boiled, mashed, and then combined with various seasonings. To make their mashed potatoes, people in Manipur add salt, mustard oil, and a lot of chili peppers. This is healthy fare, and it tastes as good as it is to make!

Chagem Pomba

The infamous murabba has a long history that begins in the ovens of the Arabs and continues all the way to the tables of India. But first, let’s take a closer look at the murabba and its history to figure out why it became so famous before we offer some recipes.

Murabba, what is it?

The murabba, in its simplest definition, is a kind of sweet preserve created by soaking fruits in a mixture of spices and sugars. Mango and amla are the most common types of murabba, however, other fruits and vegetables including apples and cherries are also acceptable.

The practice of preserving fruit by soaking it in sugar syrup has been passed down through the centuries.

Fruit soaked in a syrup of high-density sugars is supposed to generate an environment with low water activity, which inhibits the growth of germs. This has several advantages, including an increased storage life and a consistent flavour throughout time.

Background on the Murabba

Since sugar is crucial to the murabba‘s preparation, learning the origins of sugar production is essential to understanding the dish’s history.

According to popular myth, sugarcane cultivation and processing began in the Indian subcontinent. The Gupta Dynasty, which ruled from around 250 to 350 AD, learned how to extract sugarcane juice by pressing the plant and crystallise it by boiling it.

Once the sugar was secured, commerce and exports paved the way for the murabba‘s eventual rise to prominence. Jams were initially made in Persia when sugarcane was brought back by Darius the Great after his invasion of India.

Arabs in Persia, upon learning of this technique, set out to investigate its full potential and determine how else it might be used to preserve foods for extended periods of time by cooking them in sugar. Originally known as anbijat, the name murabba was later adopted for these preserved fruits.

But the arrival of the Mughals on the Indian subcontinent is also connected to this dish.

Why do Indians like eating murabbas so much?

The sweet preserves’ popularity is due to more than just their delicious flavour. Consider amla, among the most well-known murabbas. Here are some reasons why you should include it in your winter meal plans.

Immune system enhancer

The dish offers a healthy dose of Vitamins A, C, and E in every bite. As winter is when colds and flu are most common, this meal is fantastic to add to your routine.

Amazing for the stomach

Murabba is a great digestive aid since its preparation process preserves the fruit or vegetable’s natural fibres. It has been believed to alleviate gastritis when combined with sugar and honey.
